My Mona Lisa....

It is Tuesday and I'm only cooking one "new" meal this week.
I am taking a rest because I realized that when you "cook" things it creates dishes. And I'm kindof a messy cook anyway...so for me it created lots of dishes. And there are really no words to describe to you how much I hate doing dishes- except for the fact that I wish all dishes were disposable/recyclable.

Plus this is that point in the semester when all those projects/papers that you got assigned in January (Oh, good- It isn't due until April.) start roaring for attention. (Oh, shit! Today is March 1st!)

Monday's dish was an awesome success and was wonderfully yummy- I was so proud I almost called people to tell them about it.

Mini Taco Salads with Homemade Tortilla Shells and Spanish Rice: (A++)
I stole this recipe from my cookbook! Who knew there were so many recipes in there? This one gets major points for two reasons... #1 I used tortillas I already had and #2 baked them in cookware that I bought JUST for this occasion! Oh, man I need my own show- I actually bought cookware for a specific dish! (Pyrex bowl thingys-I'm sure there is some official name- but for now they are bowl thingys.) I baked the tortillas for 15 min until they were crisp and then filled with shredded lettuce, chopped cherry tomatoes, ground beef/kidney bean/corn/taco sauce mix and topped with cheese. VIOLA! (Pics of this magnificence are below.) Side Note: I read about Smart Balance Sour Cream in Women's Health- picked some up at Wal-Mart for $1.50 and it is SO good.


Oh yeah, I bought those just for this.

No cheating here- they actually stood on their own!

Um, can you say yum-town?



Ok, off to finish all those things I said I wouldn't wait to do......
